Cranberry, Oatmeal, Quinoa Cookies

This is my original cookie recipe which are easy, healthy and wonderful for Autumn or winter. This recipe makes about two dozen.
Cranberry, Oatmeal, Quinoa Cookies
Ingredients
2 cups old-fashioned oats
1 cup cooked, cooled quinoa (I used red but I don’t think it matters)
1-cup coconut flour
1 tsp salt
1 tsp baking powder
½ tsp baking soda
1 stick of room temperature unsalted butter, melted
1 cup of applesauce
2 teaspoons cinnamon
1-teaspoon nutmeg
1 cup of applesauce
2 tsp. vanilla
3 large eggs
1 cup flaked coconut
1-cup cranberries
1-cup chocolate chips
¼ cup milk or coconut milk
Preheat oven to 375 degrees. Line baking sheets with parchment paper. Mix
the oats, quinoa, flour, salt, baking powder, and soda together until all
are incorporated. Stir in the butter, applesauce, vanilla, eggs and mix well
then add the coconut, cranberries, and chocolate chips until all are
incorporated. If the dough is a bit dry, add the milk slowly until it is
just moist.
Bake 12 -14 minutes until brown on top. Cool on wire rack.
